Sweet, smoky, delicious, quick and quite easy to prepare, this yummy beef Jollof rice will have you running to your pot until you empty your pot.(lol)
ingredients
5 cups rice
10 medium tomato
4 mini sweet peppers
2 scotch bonnets
1 1/2 pound beef (cut into tiny bits)
1 cup onion (chopped)
2 bay leaves
1 teaspoon garlic paste
1/2 teaspoon curry powder
1/2 teaspoon thyme
1/2 chili powder
1 seasoning cube
1/2 seasoning powder
1/2 Jollof rice seasoning
salt
4 cups beef broth/stock
1 1/2 vegetable oil
Put the meat in a pot over medium heat, add 1/2 cup onion, garlic, curry, thyme, salt, chili powder and seasoning cube.once it starts to boil , add 1/2 cup of water
blend the tomato and pepper until puréed
wash the rice thoroughly with warm water.
put the oil in a pot over medium heat, add the meat and fry until slightly crispy, remove from pot and set aside. Stir in the onion and bay leaves, cook until onion is tender.pour in the pepper mix ,add Jollof seasoning add salt to taste, cover the pot and cook until tomato starts to thicken, add the meat stock and bring to a boil. Stir in the rice, mix properly and cook for about 3-5 minutes, add the fried beef, cover the pot with foil and the pot lid( the foil will help trap the heat so the rice cooks evenly), reduce heat and cook for another 10-15 minutes. Turn the heat off and stir properly.
