This simple stew recipe is one of my go-to stew. It is good for eating rice,plantain,yam,etc.perfect for breakfast,lunch or dinner.
with just a few ingredients,you’ll be able to prepare this recipe .
INGREDIENTS
catfish (cleaned and cut into medium size)
6-8 Roma tomato
2-3 red bell peppers
2 habanero pepper
1 cup cooking oil
1 small onion (chopped)
2 tablespoon tomato paste
1 teaspoon curry powder
1/2 teaspoon fish seasoning
1/2 teaspoon bouillon powder
1 teaspoon garlic paste
salt to taste
for the fish.

1 teaspoon white pepper
1 teaspoon fish seasoning
1/2 bouillon powder
1 teaspoon onion powder
a pinch of salt
enough oil to deep fry.
Blend tomatoes and peppers,put in a pot and boil on medium heat until the water dries up.(boiling the tomato dry will help reduce cook time when making the stew.)
Clean the fish thoroughly with lemon and warm water (this will help to remove the slimes). Pat fish dry with paper towel,season with garlic powder,onion powder,white pepper,bouillon powder,fish seasoning, salt and marinate in the fridge for about an hour or overnight.
Put a pan on the stove over medium heat,drizzle the seasoned fish with a little flour (this will help crunch up the fish,so it doesn’t fall apart in the oil),deep fish into the hot oil and fry for about 2-3 minutes on each sides or until slightly brown. Take fish out from the oil and set aside.
Heat up oil in a pan,add onion and garlic paste,cook until onion is translucent.
add the tomato paste,cook for 2-3 minutes stirring frequently to avoid burning.
pour in the tomato-pepper mix,give it a quick stir,then add the curry powder,fish seasoning,bouillon powder salt to taste,cook another 3-5 minutes.
Add the fried catfish,stir properly,reduce heat,adjust taste and allow to simmer for 5 minutes.
Turn the heat off.all done ✅.
