Peanut/groundnut soup

This delicious soup which is made with peanut is similar to egusi soup. Groundnut soup is common in Nigeria and other African countries.

This versatile soup can be used to eat rice,yam,plantain or any swallow.

Here’s a simple and straightforward recipe on how to make groundnut soup.



Ingredients

3 cups raw peanuts

meat( cooked)

smoked fish

dry shrimp

4 mini red sweet peppers

2 orange pepper

habanero pepper

1 medium onion

3-4 cups meat stock or water

2-3 handful vegetable

1 teaspoon uziza seeds

3 calabash nutmeg

seasoning cubes

salt to taste.



Put raw peanuts in a baking pan,put in the oven and roast for about 10-15 minutes turning occasionally.or pour in the pan and roast on the stove top.

grind the uziza seeds and calabash nutmeg together and set aside.

blend together the onion and peppers.

wash the peanuts,add 4-5 tablespoons water and blend into a smooth paste.







Put the cooked meat in the pot over medium-high heat,add the shrimp ,meat stock or water and onion-pepper mix,cover and bring to a boil for about 3-5 minutes.



Stir in the peanut paste,cover and allow to cook for 7-10 minutes, stirring occasionally.



Add the smoked fish,blended uziza and calabash nutmeg,seasoning and salt to taste.cover and cook another 7-10 minutes.




When the soup begins to thicken and oil starts settling on top,stir in the vegetables,adjust seasoning and salt,reduce heat and simmer for a few more minutes.



Turn the heat off.

serve with rice or any swallow.
