Melon seeds which is used in making egusi soup is a good source of potassium and calcium that helps to regulate blood pressure.
egusi soup is common to Nigeria and most west African countries. There’re different variations of egusi soup, and also different met of preparation. The most common once are the boiling and frying method.I’ll be using the frying method for this particular recipe.
it is delicious and quite easy to make,with just few ingredients.
Ingredients
2 cups melon seeds
meat(cooked)
dry fish
raw shrimp
2-3 cups meat stock or water
onion (chopped)
2-3 cooking spoons palm oil
2-3 handful vegetable (sliced)
pepper to taste
seasoning to taste
salt to taste
Wash melon seeds, and blend into a smooth paste.
Heat up oil over medium-high heat,add onion,cook until slightly tender. Add the melon paste,cook for about 2 minutes,stirring frequently.
Add pepper,continue frying for 3-5 minutes until the egusi thicken and begin to form balls.
stir in the meat stock or water.
Add the cooked meat,dry fish,cover and cook another 3-5 minutes.
Add shrimp,cook about 2-3 minutes,then stir in the vegetables. Reduce heat and simmer for a few more minutes.
All done ✅.
Serve with any swallow or rice and enjoy.
