This simple homemade chicken vegetable stir fry,is a one skillet dinner idea. Made with chicken breast,vegetables, chicken broth,and soy sauce which gives this stir fry a great flavor.
ingredients
1 pound chicken breast (cubed)
1/2 cup bell peppers (sliced)
1/2 cup jalapeño pepper (use green pepper if you don’t like spicy sauce.)
1/4 cup carrot (sliced)
4 stems green onion (sliced)
1 teaspoon garlic paste
1/2 teaspoon ginger paste
1 small onion (chopped)
1 teaspoon soy sauce
1/3 cup chicken broth
2 tablespoons olive oil
salt and seasoning
Marinate c with 1/2 teaspoon garlic and ginger for 5 minutes. Heat 1 tablespoon of oil on a skillet or wok , over medium heat. Cook the chicken for 2-3 minutes until slightly brown, remove chicken from the skillet add set aside.
Add the remaining 1 tablespoon oil in the skillet,add onion and 1/2 teaspoon garlic and sauté until onion is tender. Add the bell peppers,carrot, jalapeño pepper and stir fry for 1-2 minutes. Add the chicken, stir in soy sauce,chicken broth salt and seasoning to taste. Reduce the heat and simmer for a few minutes. Garnish with green onion and turn the heat off.
serve with white rice or coconut rice.
