This flavor-packed rice cooked in coconut milk,chicken broth and vegetables is everything from sweet,yummy,delicious,quick and easy to make.
This simple recipe redefined rice entirely. To achieve that savory and flavorful coconut taste, be minimal with the spices,and don’t add too much vegetable,so it does not over cloud the coconut flavor.
ingredients
4 cups rice
2 cups coconut milk
1 1/2 cups chicken broth
1 cup bell peppers (sliced)
1/2 cup carrot (diced)
1 small onion (chopped)
1/2 cup green peas
1/3 cup sweet corn
1/2 teaspoon curry powder
1/2 teaspoon garlic paste
green onion
2 tablespoons coconut oil or vegetable oil
salt, pepper and seasoning to taste.
Put a pot on fire over medium-high heat,add the coconut milk,chicken broth and salt to taste,add the washed rice and bring to a boil. red the heat and allow to cook on low-medium heat.once the rice is done cooking,turn the heat off, spread the cooked rice in a wide tray to cool.(this will help the rice not to stick together).
In a large saucepan,heat the oil over medium heat,add the onion,cook for 1 minute,then add curry and garlic paste,cook until onion is tender. Add the bell peppers and cook a few minutes,add the green peas and other vegetables,add salt and seasoning to taste.
Push the veggies to one side of the pan,add the rice and mix properly with the veggies,reduce the heat ,add green onion and simmer a few minutes,turn the heat off.coconut fried rice is ready.
