Dirty rice

Dirty rice is a Louisiana traditional creole dish made from white rice ,which gets its dirty color from being cooked with pieces of pork,beef or poultry.


ingredients

1 pound minced beef

1 pound chicken liver

1/2 cup bacon (sliced)

1 medium onion (chopped)

1 cup celery/green onion

1 teaspoon garlic

4 cups rice

2 cups chicken broth

2 tablespoons olive oil

1/2 cup bell peppers

1 tablespoon soy sauce

salt, pepper and seasoning to taste

Put a pot on fire,add 1 cup of water and the chicken broth,then bring to boil. Add the rice,salt to taste and cook untI’ll 80% done. Turn the heat off and set aside.


In a large sauce pan,cook the bacon until crispy,then remove from the pan. Use the bacon oil to cook the liver with 2 tablespoons of onion for 2-3 minutes or until no longer pink.remove from the pan and set aside.add 2 tablespoons of oil in the pan and cook the minced beef with the remaining onion, garlic for2-3 minutes. Then pour in the liver and bacon .add the bell peppers ,chili peppers,salt and seasoning to taste and cook a few more minutes .

Stir in the cooked rice ,mix until everything incorporates, add the soy sauce, mix properly and reduce the heat ,garnish with green onion and simmer for a minute or two. Turn the heat off and serve.
