Nigerian egg rolls is a popular street snack in Nigeria.it is made of boiled egg wrapped in dough and deep fried in oil. The egg roll is similar to the English scotch egg,except the scotch egg is wrapped in sausage . This recipe is simple,quick and easy to follow.so if you love egg roll,this is a recipe you’ll definitely like.
ingredients
5 boiled eggs
2 cups of flour
1/4 cup sugar
1/2 teaspoon baking powder
1/2 teaspoon nutmeg
2 tablespoons butter
1/2 cup warm water 1 egg
pinch of salt
oil for frying
In a clean deep bowl,sift the flour,sugar,baking powder,salt and nutmeg,mix together.add the butter and one egg,mix/ rub with the tips of your fingers.( the mixture should be crumbly).
make a well in the middle of the bowl,and add water a little at a time,mix properly until it forms a dough.
Transfer the dough into your work surface,knead for 3-5 minutes,divide the dough into 5 equal parts.roll out the dough to flatten it,put one egg in the middle of the flatten dough,wrap it around the egg,pinch the edges to seal the edges. Repeat the process until you’re done wrapping all the eggs.
Heat up the oil over medium heat,and fry the dough until golden brown.( the oil should be enough to deep fry.)
