Egusi Soup is one of the most popular soups in Nigeria and some West African Countries. Egusi Soup is made with ground melon seeds, meat, dry fish and leafy vegetable.
ingredients
3 cups melon seeds(blended)
stock fish
dry fish
shrimp
periwinkle
goat meat(cooked)
cow tripe(cooked)
tilafia fish (steamed)
palm oil
pepper
onion (chopped)
vegetable (sliced)
salt and seasoning to taste
Cook the meat with onion, pepper, salt and seasoning to taste.
Steam the fish
Wash and debone the dry fish.
Mix the ground Egusi with 1 tablespoon palm oil and 2-3 tablespoons of water.
Directions
pour the palm oil in a pot over medium heat, add onion and fry for 2-3 minutes until tender. Add the Egusi paste and fry for 2-3 minutes. Add 2 tablespoons of water, cook for another minute, add stock fish,1-2 tablespoons of water, cook for a few more minutes. add the cooked meat, meat stock,add dry fish and continue cooking.add periwinkle,shrimp,pepper, salt and seasoning to taste,cover the pot and cook for 3-5 minutes. Add the steamed fish,cook a few minutes,add the vegetable, reduce the heat and simmer for a minute or two. Turn the heat off and soup is ready.
