Fish pepper soup

Pepper soup is a common West African soup that is made with fish,chicken,cow intestines ,etc. Fish pepper soup is cooked with spicy herbs and vegetables,which makes it medicinal.it is believed that the spicy herbs used in cooking the pepper soup ,can cure fever.

This recipe is straight forward,and easy to follow. This is a recipe you will not regret trying.



I am using about 1 1/2 pound of catfish. The first step of making fish pepper soup is to have your fish cut and gutted.

Pour hot water on the fish,leave the fish in the water for 30-40 seconds,then remove from water.( this process will help toughen the skin, since catfish is known to be very soft.)

the next step is to wash the fish with lemon/lime to remove the slime, then rinse properly with cold water.



Blend the tomato and peppers.

wash ,and shred/cut the mint leaves or scent leaves .( I used mint leaves)

grind the uziza seeds and calabash nutmeg with a dry mill blender or mortal.



Start by boiling the water,pepper mix and the pepper soup spice for about 5 minutes before adding the fish. This will help bring out the full flavor of the spice.



ingredients

1 catfish ,about 1 1/2 pound

2 ehu seeds/ calabash nutmeg

1/2 teaspoon uziza seeds

one or two handful mint /basil or scent leaves

1 medium onion

1 Roma tomato (optional)

2 chili peppers

1 scotch bonnet

2 stock cubes

salt to taste.



directions

put a pot on fire over medium-high heat,add 2-3 cups of water,pepper mix and the pepper soup spice,cover and bring to boil for about 3-5 minutes.

Add the catfish,salt and seasoning to taste,cook another 10-15 minutes.

Reduce the heat,add mint leaves and simmer for another 2-3 minutes,then turn the heat off.

pepper soup is ready. Serve hot/ warm with white rice,boiled yam,plantain or agidi.
