
Fish stew

This is one of the most versatile stew I always make. Whenever I make my fish stew,rice,boiled yam,plantain,potatoes and the list goes on,comes to my mind.
This recipe is simple and quite easy to make.
I always start off by grilling the fish in the oven or air fryer,you can also fry the fish with cooking oil.


Ingredients
fish ( I used tilapia fish)
1 tablespoon tomato paste
3 cups tomato purée
1/2 cup chopped onion
1 teaspoon garlic paste
1/2 teaspoon ginger paste
1 teaspoon curry powder
1 tablespoon bouillon powder
1 teaspoon dried oregano
1/2 teaspoon paprika
pepper to taste
salt to taste
1 cup cooking oil
direction
heat up the oil in a pan over medium heat, add onion, garlic and ginger paste and cook until onion is tender. Add tomato paste and cook for about 2-3 minutes stirring frequently to avoid burning.


Add the tomato purée and pepper,stir properly .
then add the curry powder,oregano,paprika,seasoning powder, salt to taste,cover and cook for about 5-7 minutes, stirring occasionally.


Add the fish,reduce the heat and simmer for a few more minutes.

And the fish stew is ready.
serve with rice or anything of your choice
