This is for those of you who likes your fried rice colorful and greenish,but wants an alternative to curry powder and turmeric.
ingredients
4 cups rice
3 jalapeño peppers
1 pound cooked shrimp
1 1/2 cup diced carrot
1 cup green peas
1/2 cup sweet corn
1/4 cup green onion
1/3 cup onion
1/2 cup oil
1 teaspoon garlic
salt , pepper and seasoning to taste.
Blend the jalapeño peppers until puréed,pour the blended pepper in a pot,add 2 cups of water and salt to taste. Bring to boil ,then add the rice and cook until 70-80% done.
Put a sauce pan on the stove over medium-high heat, add the shrimp and cook for 2-3 minutes. Add the onion,garlic and seasoning,cook until tender. Add the green peas, sweet corn,carrot and cook for a minute or two.
Add the cooked rice,mix everything together,reduce the heat to low-medium and allow to simmer a few minutes,then turn of the heat.
