Jerk chicken

This Caribbean way of making homemade chicken is based on mainly habenero peppers and allspice. This particular recipe is a one of a kind jerk chicken that is absolutely yummy and delicious. Marinated in hot jerk spices and slow-cooked in the oven.


ingredients

10 pieces chicken drumsticks

4 stems green onion/celery

3 cloves garlic

Fresh ginger

3 scotch bonnets peppers

1 tablespoon lemon juice

1 1/2 tablespoons soy sauce

2 tablespoons honey

1 teaspoon dried thyme

1/2 teaspoo cinnamon

1/2 teaspoon nutmeg

1 teaspoon black pepper.



Wash the chicken and pat dry with a paper towel. Put the chicken in a gallon size resealable bag. in a food processor,put the green onion, garlic, ginger,habenero peppers,lemon juice,soy sauce,honey,thyme,nutmeg,cinnamon,black pepper,and crush(it shouldn’t be puréed),pour the mixture over the chicken in the bag, seal the bag then shake gently to rub the spice all over the chicken. Let it rest in the refrigerator for 3 hours- overnight.

Arrange the chicken in a baking sheet, leaving spaces between them(so the chicken don’t stick together) and bake for 40-50 minutes on 180 degrees heat.( 30 minutes into the cook time,broil the chicken on both sides .)
