Meat pie

Meat pie is a popular snack in Nigeria and other West African Countries. The famous Nigerian meat pie has a buttery flaky crust,with a savory beef fillings.

ingredients

crust

4 cups flour

2 sticks (16 tablespoons) butter

1 teaspoon baking powder

1 teaspoon nutmeg

1 tablespoon sugar

2 eggs

1 teaspoon salt

2/3 cup cold water


fillings

1 pound ground beef

1 cup potato (diced)

1/2 cup carrot (diced)

1/2 cup onion (chopped)

1/2 cup bell peppers (sliced)

1 teaspoon garlic paste

1/2 teaspoon ginger

1 teaspoon vanilla extract

1/2 teaspoon curry powder

1/2 teaspoon thyme

1 tablespoon oil

salt and seasoning

1 tablespoon flour + 1 tablespoon water (mix the flour and water and set aside for thickening the fillings)




Put a sauce pan on the stove over medium- high heat, pour the oil in pan,once it heats up,add the onion, garlic,ginger and cook for 2-3 minutes until tender. Add the ground beef,add curry and thyme, and cook until beef no longer pink. Add the potato,cook a few minutes until potato is tender, stir in the bell peppers, carrot,salt and seasoning to taste. Cook for a minute or two,then stir in the vanilla extract and the flour mixture. Reduce the heat and simmer a few minutes,then turn the heat off and set aside to cool.




In a clean dry bowl,mix the flour,baking powder, nutmeg, sugar and salt (if using a salted butter,do not add salt). Add the butter and mix until crumbly. Add one egg,mix properly,then stir in the water and mix until it forms a dough.Tranfer the dough to a lightly floured work surface,and knead for about 2-3 minutes. Put the dough back in the bowl, cover with a plastic wrap and let it rest in the fridge for 30 minutes.



Preheat the oven to 350 degrees. Transfer the dough back to the work surface, cut the dough into 10 equal parts, roll it out into circular shape and place on a meat pie cutter.put a spoonful of beef fillings in the middle,close and press down to seal the opening. Place in a baking pan lined with cookie sheet, use a fork to bole 2-3 holes on the pie, brush the pie with the remaining egg,place the pan in the oven and bake for 30-35 minutes. And the famous Nigerian meat pie is ready.
