Nigerian fried beans

This simple homemade fried beans recipe will make start craving for beans all the time. It’s quick and pretty easy to prepare. Suitable for lunch or dinner.


ingredient

2 cups beans ( black eyed peas)

3 small tomato (chopped)

2 sweet peppers (chopped)

2 stalks green onion (sliced)

1 medium onion (chopped)

cray fish

dry fish

2 tablespoon palm oil

salt and seasoning



Wash and debone the fish an set aside.

Perboil the bean for about 3-5 minutes, rince the beans and pour fresh water into the pot and bring to boil. Add the beans, salt to taste and 2 tablespoons of onion, cook until beans is tender, turn the heat off and set aside. Pour 2 tablespoons of palm oil in a sauce pan over medium heat, add the remaining onion and crayfish, fry for 1-2 minutes until onion is tender. Add tomato and pepper, add the dry fish, salt and seasoning to taste, cook until the tomato juice is all dried up. Add the cooked beans, mix until everything is properly incorporated. Reduce the heat, garnish with the green onion,cover and allow to simmer for a minute or two. Turn the heat off, allow to cool for a few minutes then serve.
