Nigerian Jollof rice is an incredible one-pot rice cooked in tomato sauce. This delicious goodness is a popular dish in most Nigerian parties. Your Jollof rice can never go wrong with this my simple homemade recipe.
Tips: boil your blended fresh tomato and pepper prior to cooking, to save time.
ingredients
5 cups rice( properly washed)
6 medium size fresh tomato
pepper (to taste)
1 medium size onion
1 teaspoon garlic
1 teaspoon ginger
2 tablespoons tomato paste
1/2 teaspoon curry powder
1/2 teaspoon thyme
1 teaspoon Jollof spice mix
3 tablespoons cooking oil
2 bay leaves
3 cups chicken broth
2 tablespoons butter
salt and seasoning to taste.
Put a large pot on the stove over medium-high heat,add the cooking oil and butter. Once the butter is melted,add the chopped onion and bay leaves ,cook for 2-3 minutes until onion is tender,add garlic ,ginger and cook another 1 minute,then add the tomato paste and cook for about 2 minutes,then stir in the tomato and pepper mix,add,thyme,curry,cook for 1-2 minutes, stirring frequently to avoid burn. Pour in the chicken broth,add salt and seasoning to taste,and allow the sauce to boil. pour the rice into the boiling sauce,mix properly until r is fully incorporated with the sauce,cover the pot and cook for 1-2 minutes, then reduce the heat to low-medium and allow the rice to simmer for 15-20 minutes. Then turn off the heat.
