Ogbono soup

Growing up as a kid in Nigeria,this is one of the common soup in my house,simply because we had a tree that produce the ogbono seed at the back of my house.We ate this soup so much that I began to hate ogbono soup,but now that I’ve left home,and I have to drive several miles to get the ogbono seed,I cherish every moment I get to eat the soup.

For those who don’t have an idea what I’m talking about, ogbono soup is a popular Nigerian soup that is made with ground dry ogbono seeds( Irvingia). The ogbono soup has a slimy texture like okra soup. Ogbono soup is very easy to prepare. You use just fish ,meat or a combination of both fish and meat to prepare the soup. Today, I’m using both fish and meat for my ogbono soup. The okporoko/stock fish ( where I’m from,we call it “azun opia”), gives the soup a very unique aroma and taste.palm oil gives it the bright colors,ugwu or bitter leaves for garnishing,( you can use any other leafy green vegetable as a substitute.)

Ogbono soup is best eaten with fufu,pounded yam,eba,amala etc. Here’s is my ogbono soup recipe.




ingredients

1 cup ground ogbono seeds

meat- goat meat,cow tripe,cow skin

dry fish

snail

stock fish

dry prawns

1/2 cup palm oil

4-5 cups meat stock/ broth

2-3 handfuls spinach

1 medium onion (chopped) salt to taste

seasoning

2 tablespoons ground habanero pepper/ to taste


prep.


wash the crayfish and dry fish with warm water and set aside.

use a dry mill blender to ground the ogbono.

slice or shred the vegetables.

wash the snail with alum or lime/lemon to remove the slimes.

wash the meat.

put the meat,snail,stock fish in a pot over medium-high heat,add half of the chopped onion,one tablespoon ground pepper,salt and seasoning to taste.add water enough to cook the meat ,stir and cook until everything is tender.




Put a pot on fire,add the boiled meat,snail,stock fish .add dry fish,crayfish,onion and palm oil,cover and bring to a boil for about two minutes. Add the remaining peppers,salt and seasoning to taste,cook for another two minutes.




then stir in the ground ogbono,mix properly to avoid lumps.cook for 4-6 minutes,stirring occasionally. Adjust taste,reduce the heat and stir in the vegetables,simmer for a a minute or two,then turn the heat off.

serve with eba or any swallow of your choice.
