Okra soup is one of the most common soup around the world. Most parts of the world has a way of incorporating okra into their soups. This particular recipe is common to Nigeria and some Western African Countries. It is juicy, delicious, quick and easy to make.
ingredients
1 pound okra (grated or cut into bits)
1 cup onion (chopped)
meat
dry fish
snail
periwinkle
shrimp
vegetsble(2 handfuls)
1/4 cup palm oil
2 mini sweet peppers
1 habenero pepper
1 Roma tomato
salt
seasoning
Cut okra to desired shapes and size.
wash the snail with alum or lemon juice.
soak the dry fish with hot water for 2 minutes, rinse it with clean cold water and remove the bones
blend the peppers and tomato
put a pot on fire over medium heat, add the meat,snail, onion,salt and seasoning to taste , bring to a boil then add 1/2 cup of water. Cook until meet and snail is tender, add the dry fish, pepper mix, palm oil and 1/2-1 cup of water, cover the pot and bring to a boil for about 3-5 minutes.Add periwinkle, shrimp, salt and seasoning to taste, cook for another 2-3 minutes. Add the okra, cook for another 1 minute, add vegetable, reduce the heat and simmer for a minute or two then turn heat off. Food is ready.
