ingredients
4 cups rice
1 cup tomato purée
2 teaspoons tomato paste
3 tablespoons cooking oil
1/2 cup chopped onion
2 stock cubes or season to taste
3 cups chicken broth or water
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1/2 teaspoon curry powder
1/2 teaspoon jollof rice seasoning
1/3 cup green peas
1/3 cup sweet corn
salt and pepper to taste.
Preheat oven to 350 degrees. Pour the rice in a deep oven pan or casserole dish,add tomato purée,tomato paste,onion,oil and the other ingredients,except green peas and sweet corn,stir properly ,check and adjust taste.cover firmly with foil( this will help trap the air, so the rice cooks evenly).
Place the pan in the preheated oven and cook for 25-30 minutes.
Remove the foil,give the rice a quick stir,add the peas and sweet corn,turn the heat off ,and allow the veggies to cook for 1-2 minutes,then remove from oven. Stir everything together and serve.
