Shrimp, yum!. This shrimp stir fry is quick and easy to make. Flavorful and packed with some yummy goodness. Suitable for breakfast, lunch or dinner.
ingredients
1/2 pound shrimp
1 cup mini sweet peppers or bell peppers (sliced)
1/3 cup jalapeño peppers (sliced)
1/4 cup chopped onion
1/2 cup carrot (sliced)
3 pieces bacon (sliced)
3 stalks green onion (sliced)
1/2 teaspoon garlic
1/2 teaspoon ginger
1 tablespoon olive oil
salt and seasoning to taste
Place a nonstick pot on the stove over medium heat, add the bacon and cook until a little crispy, remove from pot and set aside.
Add the oil to the pot, add the shrimp, garlic and ginger, cook for about 2-3 minutes. Add onion and cook for 1 minute until onion is tender. Add the jalapeño peppers, cook for a minute or two, and the mini sweet peppers and cook for another 1 minute. Toss in the carrot, bacon, salt and seasoning to taste, mix properly and reduce the heat. Garnish with green onion, turn the heat off and serve.
