This tomato stew is quite mile and easy to make. It can be used to eat various foods like rice, beans, pounded yam, it can also serve as a dipping sauce.
Ingredients
8 medium tomato
4 mini sweet pepper
2 scotch bonnets
1 cup onion(chopped)
meat
1/2 cup meat stock
1/2 teaspoon curry powder
1/2 teaspoon thyme
1/2 teaspoon garlic paste
1 1/2 cup vegetable oil
salt
seasoning
Blend the peppers and tomato until puréed.
perboil the meat with 1/2 cup onion, curry ,thyme, garlic, salt and seasoning to taste.
pour the oil in a sauce pan over medium heat, add the meat , fry until slightly crispy. Remove from oil and set aside . Add the remaining onion to the pan, cook until onion is tender, pour in the pepper mix, add a little seasoning powder, cover and cook until the stew starts to thicken and the oil starts settling on top.Add the meat and the stock, add salt and seasoning to taste, cover the pot. Reduce the heat and simmer for 2-3 minutes, then turn the heat off.
