Delicious homemade yam porridge.cooked with fish and cow fopot,tomato,peppers. I used ripe plantain to thicken the porridge , and a little spinach for the garnishing.
ingredients
1 medium tuber of yam(about 1 1/2 pound )
1 ripe plantain ( thinly chopped) optional
meat/ cow foot (chopped)
smoked mackerel fish
2 Roma tomato
3 mini sweet peppers
1 habanero pepper
1 medium onion
1-2 handfuls spinach
1/3 cup palm oil
seasoning cubes
salt to taste
prep
Peel the yam and cut into small cubes.
blend the tomato,peppers and onion.
peel the plantain and cut into tiny bits
cut the fish into small pieces and remove the bone.
chop/ slice the vegetables.
Put a pot on fire, add 1-2 cups of water and bring to a boil. Add the yam,tomato and pepper mix,salt to taste ,cover and cook for 1-2 minutes.
Add the fish,meat and seasoning cubes,cook for about two minutes, then add the chopped plantain and palm oil,cover and cook for another 2-3 minutes.adjust the taste, turn the heat off,stir in the vegetables,cover and allow the heat to cook the vegetable.
