Simply,boiled yam coated in eggs and flour. A popular side dish in the Northern parts of Nigeria, but enjoyed by all. This is a quick and easy recipe.


ingredients

1 medium yam

3 eggs

2 tablespoons onion (chopped)

2 tablespoons jalapeño peppers (sliced)

1 teaspoon garlic paste

1/2 teaspoon ginger paste

1/3 cup flour

seasoning powder

2 1/2 cups vegetable oil

salt to taste



Peel yam, cut into small rectangular shapes, put in a pot of boiling water and cook with salt until tender enough for a fork to pass through,take out of the pot and set aside to cool.

put the flour in a bowl, add the eggs, onion, jalapeño pepper, garlic,ginger, salt and seasoning powder to taste, whisk together until all the ingredients is properly incorporated . Put the oil on fire over medium heat,deep the yam into the flour and egg mixture, drop into the oil and fry until light brown . Repeat the process until you’re done with all the yam. Serve with a dipping sauce or vegetable sauce.
